Pikelets

In our house the only difference between a pancake and a pikelet is the size and what time of day they are eaten. A pikelet is a snack and served with jam and cream. A pancake is a dessert and served with ice cream and topping or maple syrup. It's easy to remember this recipe, it's the rule of ones.

Ingredients
  

  • 1 cup Self raising flour
  • 1 cup Milk
  • 1 teaspoon Sugar
  • 1 Egg
  • 1 teaspoon White vinegar

Instructions
 

  • Mix all dry ingredients together in a bowl or large jug.
  • Mix vinegar into milk then add to dry ingredients. Crack in the egg. Mix well.
  • Pour or spoon into a heated and greased pan (I use spray oil). Wait until bubbles form and pop, flipping onto other side till browned.
  • Cool on a wire rack for pikelets to cool. Pancakes we eat hot off the pan.

Notes

These once cooked freeze well.
There are many ways to measure how much mix goes into the pan, measuring cups, ice cream scoops etc, I like to live dangerously and I just use a tablespoon, usually the one I made the mix with.
This is so much better for you than the pre mixes and its made with what you have at home already.
Don't want to use vinegar, try using a table spoon of fresh squeezed orange juice instead, similar acidic reactions.
Out of this mix I generally get 4 pancake sized for dessert and 6 pikelet sized to be buttered and jammed up for the next days lunches.

I love the fact there is no kneading for this recipe.

Ingredients
  

  • 4 1/2 cups Flour
  • 3 tablespoons Caster sugar
  • 1/2 teaspoon Salt
  • 7 grams Dried yeast
  • 1 cup Milk
  • 1 1/4 cups Water
  • 1/2 cup Margerine
  • 1 Beaten egg

Instructions
 

  • Combine approx 2/3 of the flour with sugar, salt and yeast in your mixer with your dough hook.
  • Heat milk, butter and water till warm and butter melted. Can use the microwave, just don't over heat the ingredients, tepid is what you're after.
  • Add warmed liquid and egg to the mixed flour bowl.
  • Beat with mixer on low for 3 minutes, slowly adding the rest of flour to form a stiff batter.
  • Cover loosely and let rise approx 30 minutes. Grease muffin pans (no paper liners the dough will stick).
  • Stir down batter to remove bubbles. Fill muffin tins 2/3 full. Cover loosely and let rise until doubled again. About 25-30 minutes.
  • Bake at 200*C for 15-20 minutes or until golden. Tap on top for a hollow sound.
  • Turn out onto a wire rack to cool. Lovely eaten fresh with butter.

Notes

Can freeze these when cool.
The original recipe had 6 tablespoons of sugar, for us 3 tablespoons is enough.
I spray oil plastic wrap to loosely lay over top while rising.
You can add sultanas or raisins with spices to the dough mix. * Make half plain half with fruit.
You could leave out all but 1 teaspoon of sugar and add herbs for a savoury dinner roll.
You can ice the cooked bun.

Potato Salad

One of our summer salad favourites.

Ingredients
  

  • 4-6 Potatoes
  • 1/4 Cup Peas
  • 3 Eggs
  • 3 Bacon rashers
  • 1/2 Onion
  • 12 Fresh Mint leaves
  • 1/4 Cup Mayonaise
  • 2 - 3 Tablespoons Milk
  • Cracked pepper

Instructions
 

  • Cut potatoes into a large dice and boil or steam. Drain and cool.
  • Hard boil your eggs and cook your fresh or frozen peas. Drain, cool and peel eggs. Dice 2 of your eggs and 1/4 the other (goes on top).
  • Dice and fry off your bacon to a light crisp (keep aside a bit to go on top). Add your onion. This lets your onion absorb your bacon flavours. Cool.
  • My dressing is as I like it, roughly the 1/4 cup of mayo thinned down with a tablespoon or 2 of milk until I'm happy with the consistency, you can add a little seeded mustard for flavour. You can use bottled potato salad dressing if you prefer.
  • In your bowl mix your potatoes, peas, bacon and onion, some torn mint leaves, pepper and your 2 diced eggs. Add as much dressing as you need. Chill.
  • Spoon into your serving dish placing egg segments on top. Sprinkle with bacon and torn mint leaves on top.

Notes

I grow mint so I just grab it as I need it, I've not tried this with dried mint leaves. My Nanas original recipe called for parsley, I only changed my recipe in the last few years. If you don't have one try the other. She also used just plain mayo, I find plain mayo to thick for a dressing so I thin it out, because I can.
I also grow shallots so I switch between onion and shallots for this recipe. If I use shallots I don't panfry with the bacon.
I use Desiree potatoes or purple skinned potatoes, I just like them. They hold their shape well for this when cooked and don't break down to make it mush especially when many people are dipping in a serving spoon. But it's not a necessity, as long as you keep an eye on your potatoes and don't over cook.

Vinegar

* Vinegar I’ve found takes the boys’/men’s horrible summer sweat smell out of their shirts when washing.  Just fill your machine’s softener dispenser with white vinegar (I use home brand – $1.05 for 2L). You may get a slight vinegar smell when you hang clothes out on the line but it does disperse over the line drying time. Now for me it’s just a matter of course; vinegar is also a disinfectant, so what can it hurt?  No ill effects on any clothes so far. The hint I read for vinegar originally  was more to do with keeping the pipes clean while washing as softener over time tends to clog it.

* Add 1 teaspoon of vinegar to your pancake mix for lighter pancakes.

* Add 1 tablespoon of vinegar to 1 cup of milk  to sour it instead of buttermilk.

* Wipe down bench tops and glass.

There are many more uses but these are my favourites.
