After cleaning out my fridge this morning I discovered little bits of veg, not enough for a meal but too much to throw away, so they end up staying there. I found cauliflower, broccoli, a few beans, a zucchini, and 1/4 of a sweet potato. With my potatoes and carrots I’m never without I will cut and steam them all up. Transfer vegetables to a heat proof dish. Pour over some basic white sauce, sprinkle over some grated cheese with some herbs, paprika or cracked pepper. Pop under a hot griller for approx 5 mins to melt the cheese. It’s a cheats au gratin. I’m serving with steaks tonight. This can be done with any left over cooked veg.
