Walnut Loaf

Something different to make for morning or afternoon tea, Walnut loaf.

Walnut loaf

Easy recipe that can also be loaf, muffin squared from a slice tray.

Ingredients
  

  • Preheat oven 175*C
  • 1 cup Chopped walnuts Toasted lightly
  • 1 1/2 cups Self Raising flour
  • 1/2 cup Caster sugar
  • 1/2 cup Brown sugar Packed
  • pinch Salt
  • 1/2 cup Vegetable oil
  • 1/2 cup Milk
  • 2 Eggs
  • 2 tabs Vanilla/Greek Yoghurt Or another egg.
  • 1 teaspoon Vanilla
  • Optional extra chopped walnuts for the top of loaf.

Instructions
 

  • In a bowl mix self raising flour, caster sugar, brown sugar, salt and cooled walnuts.
  • In a separate bowl mix oil, eggs, milk, vanilla and yoghurt.
  • Pour the oil and eggs into the flour bowl gently folding as you go, keep turning over until all combined and just mixed.
  • Pour into a lined loaf tin approx 12cm X 22 cm. Top with optional extra chopped walnuts. Place in a preheated oven for about 30-35 minutes. Checking with a skewer for doneness.
  • Let cool in tin for fiveish minutes then take out and continue to cool on a wire rack.

Notes

- Self raising flour is 2 x teaspoon of baking powder to 1 cup plain flour ratio.
- You can have up to 1/2 cup more of chopped walnuts in the mix if you wish.
- I use yoghurt  but you can use another egg if you wish.
- The photo included is in my slice tray but I have made in a muffin tray and they
all work well, just adjust the time.
- Swap out walnuts for  pecans.
- All slice and freeze well for future snacks.
