Chicken pasta salad

First off I have no photo, I seem to forget to do these things when I’m cooking dinners during the week BUT this was very nice you can pretty much use what you have on hand.  Add amounts that look like it will feed your family.

I’ll list the ingredients I used for 3 servings but it’s up to you what you add to yours.

Enough cooked and cooled pasta for the amount you’re feeding, I used penne and a bit of spiral left in the bottom of the packet (I did cook them separately as the sizes have different cooking times).

Handful of frozen peas and a handful of frozen corn cooked and cooled.

Cherry tomatoes, halved or quartered depending on size.

Onion, thinly sliced.

Fresh parsley, about an handful when chopped.

Basil, a few leaves torn into the bowl, only because I grow it, it’s optional.

Mix all of the above together in a big bowl and crack in some pepper.

Mayonnaise, mix in enough mayo to generously coat your pasta mix.

Add in …

Cooked and chopped chicken, about 2/3’s of a chook depending on how hungry you are. Fold the chicken into the pasta and mayo mix. Add more mayo if you think you need it. I didn’t put more in but I/we don’t like our salads drowned in mayo as you miss the other flavours.

I divided into 3 bowls and served but you could put it in a big bowl in the centre of the table for each to serve their own.

Heat up some garlic bread, which is just any kind of bread roll, sliced almost through with butter and garlic or butter and herbs popped in the 200*C oven for 10 mins or even just under the kitchen griller to melt and crisp a little. Yum!

Hmmm also add chopped ham chunks, cucumber chunks, capsicum, chopped broccoli, chopped turkey … your options are really endless.
