Calzone

I made calzones for dinner last night, I had some left over bbq chicken and some bacon.  It was either pizza or a variation.

Using the Pizza dough recipe I cut the dough in half.  I used half to cut into 4 pieces to make 4 calzones.

For this I just then rolled out the small ball of dough into a rough circle like a pizza base, fairly thin.

Spreading tomato relish (or a pizza sauce) on half I then topped with a mix of chopped chicken, bacon and grated cheese.  Use any filling combination you like.

Brushing edge with milk fold in half pinching together to seal edges.

Place your semi circular calzones on a baking tray and brush with milk.  Optional to sprinkle on sesame seeds.

Bake in a preheated 220*C oven for about 20 mins or until dough is cooked.

Don’t want to make individuals?  Roll your dough out into a long rectangle, spread your ingredients on the long side half.  Fold over to make one big long rectangle and seal edges. Bake as per above.  Cut into 3-4cm fingers and serve hot or cold.

For me this dough recipe makes 4 largish calzones and 2 small pizza bases or some vegemite scrolls.  OR  freeze the uncooked dough for easy use another day OR  simply halve the dough recipe to make the smaller amount.

Make any serving size you wish, just divide your dough accordingly.

You can also make as many calzones as you wish to freeze for lunches for another day.

These are a much nicer version of the pre made and frozen pizza pockets.

Sunglasses cases

I don’t know about you but when I buy a new pair of sunglasses they always come with a case.  It depends on the brand you buy as to what sort of case comes with them.  A few times over the years I’ve been lucky enough to get zippered ones and I love them.  They  are useful for all sorts of things besides glasses.

They can be cosmetic purses, they fit brushes wonderfully.

You can put a few pencils and some note paper to keep little kids occupied when you go out to a restaurant or ….

They make handy cases for a basic first aid kit to pop in the car, travel bag or handbag.

They are just a handy little zippered bag that can be put in your handbag to take with you anywhere.

Don’t throw them out.

Loaves and Muffins

Did you know that a muffin recipe makes a great loaf recipe?

Next time you want to make your favourite muffins try baking the batter in a loaf tin. Of course adjust your baking time accordingly.  Depending on your tin size start with 25 mins, test and go from there.

This is lovely sliced with butter, just like a banana bread.

You’d still be able to freeze either in the full or half loaf or in slices.  Slices defrost quickly and you have your snack in 5-10 minutes.

Chocolate Brownie

Ingredients
  

  • 3/4 cup Butter or Marg
  • 3/4 cup Cocoa powder
  • 1 1/2 cup Caster sugar
  • 3 Eggs
  • 2 teaspoon Vanilla
  • Pinch salt
  • 3/4 cup Self raising flour

Instructions
 

  • Melt butter in a bowl and mix in sifted cocoa.
  • Add sugar and mix well.
  • Add lightly beaten eggs slowly.
  • Add vanilla, flour and salt until just combined. Pour into a lined slice tray (approx 28x18cm). Square will also work it will just be a little thicker when baked
  • Bake in a preheated 175*C oven for about 25 mins. Do not over bake it should be just fudgy in the centre.
  • Cool in tin for 5 mins and then using the double wire rack method turn out of tray and cool further. Cut and dust with icing sugar if you wish.

Notes

Yes this can be done with coconut oil (same amount as the butter).
Yes you can use cacao instead of cocoa.
You can add chocolate or other chips if you wish.
You can add walnuts or pecans if you wish.
Personally I think nuts or choc chips get in the way of the fudginess enjoyment.
These can be made as cupcakes in papers.
Yes this can be cut and frozen in a sealed container.

Salsa Chicken Parmigiana

We love a good chicken parmigiana in this house.  Last night I decided this is what we are having for dinner but in reality I was to lazy to do the chicken crumbing portion of the recipe.

Using 2 whole (or 1 double) breast pieces. I cut each breast piece in 3, the thicker portion top and bottom for 2, then the thinner end, 3 pieces in total.

I pan fried the chicken in spray oil to just get colour and seal the meat.

Pouring in a jar of salsa I let simmer with a lid until the chicken was cooked, making sure I turned and covered with the salsa.

Heat up the griller.

Then I sprinkled some shredded ham on the tops of the chicken and then a slice of cheese (enough to just cover the chicken piece)

Popped the pan under the griller until the ham had heated and the cheese bubbled.

I served with steamed potatoes, broccoli and carrots.   YUM.  I was actually asked to do this dish again this way.

If you like a spicier chicken sprinkle on some some of your favourite spices or use a hot salsa.

This only took about 15-20 mins to cook.
