Roasted nuts

Make your own, you need;

180*C oven.  Raw nuts.

Place your nuts of choice on a lined baking tray.

Pop in a preheated oven for about 10-15 minutes.

Keep and eye on them and give a shake and a stir every 5 mins or so.

Cool and store in an airtight container.

Put them in the oven after you’ve baked a cake while the oven is still hot rather than starting the oven for a few nuts.

You can crack salt over them before baking but I like them as is.

I tend to only do a few at a time, what’s needed. Here are my almonds and cashews.

Apple turnovers or Apple puffs?

Apple turnovers have to be one of the quickest desserts you can make. We had them last night.  I found a couple of apples in the fridge that needed to be used soon so this was the prefect way to use them and not waste them.

Generally I have these made up and just before we sit down to dinner I pop them in the preheated oven.

You can make them up for a quick morning or afternoon tea snack as big or as little as you’d like to make them.

If you are careful and sneaky you can pipe a little whipped cream into the centres when they are cold.

If you can’t be bothered with all the cutting and making into squares or triangles just fill the centre of your pastry with your apple (you may need more than 2 cooked apples) and roll like a log.  Seal the ends, snip the top with scissors 3 or 4 times and bake.  Slice to the portions you need to serve (like a strudel).

Even quicker use tinned apple or fruit.

Ingredients
  

  • 1 sheet Frozen puff pastry
  • 2 large Apples
  • 1/4 cup Water
  • 1 teaspoon Sugar
  • Milk
  • Cinnamon*
  • Icing sugar

Instructions
 

  • Peel and chop apple to evenish sized pieces, pop in a saucepan. Add 1 teaspoon of sugar and the water. Simmer until only just cooked. Cool.
  • While apple is cooling defrost the pastry sheet and cut into 4 even squares.
  • Without taking too much of the juice take the apple out and place on one side of the pastry squares. (Take to much juice and it leaks out of the edges to give soggy pastry). It's up to you if you wish to fold side to side to make rectangles or corner to corner to make triangles. Sprinkle on a little cinnamon. Brush the pastry edges lightly with milk, fold and press together to seal.
  • Carefully place the apple parcels on a lined tray, brush tops with milk. Dust with icing sugar and cinnamon.
  • Place in a preheated 200*C oven for about 15-20 minutes or until golden brown. Cool a little.
  • Serve with ice cream or whipped cream but they are nice just on their own.

Notes

Eat hot or cold or somewhere in between which is my preference.
Divide the pastry any way you wish to make the size turnover you want.
Yes you can used tinned pie apple.
Mix and match put in raspberries or blueberries  with your apple.
Cloves or mixed spice is always nice in apple but I don't put spices in if I use berries.
Use another fruit of your choice.
Yes you can freeze the cooked product but I don't, my preference is to eat within the hour.
 

Fritters or savoury pancakes

The basic pancake recipe  can be used for variety of snacks by adding different herbs, vegetables and cooked meats.

For savoury make your basic pancake mix, omit the sugar and add your seasonings, salt, pepper, herbs or spices.

Salt, pepper and herbs with cooked and chopped corned beef, ham, bacon.

Add grated cheese and herbs.

Grated carrots and zucchini (squeeze out some of the juice before adding to mix).

Cooked and chopped vegetables.

Serve with tomato sauce or spread on butter.

 

Go sweet and keep the sugar adding grated apple and cinnamon.

Classic ice cream and chocolate topping or maple syrup.

Add in blueberries.

Mix in mashed banana and cinnamon.

Chocolate chips. Beware of overloading, it doesn’t end well if you don’t keep the chips small (as in chopped) it goes into a gooey mess and you can’t flip properly.

Top with cream or ice cream.

Pick and choose your own combinations.

 

Yes fritters freeze.

My favourite all time fritter is corned beef with peas and corn, mixed herbs. Spreading with tomato sauce when cooked

Ingredients
  

  • 2 sheets Frozen puff pastry I use Borgs an Aussie brand
  • 4 link Pork sausages
  • 1/2 small Onion
  • 1 small Carrot
  • Herbs of your choice
  • 2 tablespoons Milk

Instructions
 

  • Preheat oven to 220*C. Take your 2 frozen pastry sheets out to defrost.
  • Squeeze the sausages out of their skins into a bowl. Add the grated carrot, onion and herbs.
  • The best way to mix these ingredients together is to use your hands and squish it.
  • When your pastry is defrosted cut in half left to right to make 2 rectangles per sheet, 4 in total.
  • Divide the sausage meat into 4, spread and mound long ways down the middle of the strips on the pastry.
  • Brush along 1 edge of the pastry with milk. Roll the pastry along the length to encase the sausage meat. Make sure the overlap is underneath.
  • Cut each length into 6 pieces then place pieces on a lined tray. Brush the tops and sides with milk. Bake for approx 20mins or until cooked and golden brown. Eat straight away with dipping sauce.

Notes

Optional, sprinkle sesame or poppy seeds on top of pastry after brushing with milk.
Use any sausage you wish, our favourites are chicken or pork but you can use beef or lamb or ...
You can use sausage meat but I have found it's very fatty so I use sausages.
Add chopped bacon to the meat mix.
Add in a bit of grated cheese.
Put a tablespoon or 2 of sweet chili sauce into the mix.
Cut the pastry rolls to size and amount you wish, 8 gives you smaller ones, cut 4 for bigger ones.
Of course the more you add to the sausage meat the more filling it will give you so you can either defrost more pastry to make more rolls, cook and freeze or you can cook any leftover meat mix for a sausage and egg muffin for breakfast or snack.
