I made up a recipe for a pineapple cake a few weeks back and I was a bit disappointed. It was one of those 1 cup of everything cakes with no eggs and no butter/margarine or shortening of any kind and I found it a little … chewy.
So I decided I’d play around with my butter cake recipe and a can of pineapple to see what would happen and I’m glad to say I’m happy with what I baked. Oh I found some passion fruit pulp in a can from I don’t know when and decided to use that up. I think I’d try it with fresh ones next time as I didn’t get the nice tart kick in the cake I’d usually get with fresh passion fruits and I love that tartness
