Packet or box cake mixes

Over here we generally call it a packet cake mix. The store bought pre packaged cake mixes.  I don’t use them all the time but lets face it some times we just want to add an egg and some milk, mix and have instant cake batter to pop in the patty papers or a cake or slice tin and have it all be over and done with. I know I do.

I buy the home brand store mixes, they are generally under $0.80c or the occasional other on special. I’ve noticed that over the years they are not as sugary as they used to be.  Vanilla or chocolate are the ones I usually go for as they can be added to for variety.

For vanilla mixes you can add…

Spices and sultanas or raisins (add the sultanas or raisins to the flour mix, coat, then add the wet ingredients).

2-3 ripe mashed bananas with some spices.

Chopped apple mixed in or in a layer with spices.

Crunch up oreo type biscuits in the mix.

With a little extra milk in the mix (1-2 tablespoons?) and a handful of coconut.

With a little extra milk in the mix add a handful oats and sultanas and bake in a slice tray.

Choc chips.

Split the batter in half, pop in some pink food colouring and layer and marble the cake.

… and any other choices you may like.

For chocolate mixes you can add …

Orange juice (half and half with milk) and orange zest for a jaffa cake. Top with orange icing.

Some made up coffee to mix in with your milk to make mocha.

1 chocolate cake mix, 1 vanilla cake mix, layer and marble.

Choc chips, white chips or other.

Chopped cherries.

Bake in a slice tray.

… and any other choices you may like.

You don’t need a cupcake mix for cup cakes, you just need cupcake papers.

I know you can make biscuits or cookies with a packet cake mix but I personally am not a fan, I like my biscuits thin and crispy not cakey.

Experiment.

    Lots of different variations. I didn’t know you could make biscuits with it, though I don’t know if I’d like a cakey texture either.
