Coconut crumbed fish

I don’t have a real recipe it’s just what looks good.

Fresh fish fillets I usually go for a quick cooking fillet like whiting for this.

Plain flour.

Coconut milk (can).

1 egg.

Shredded coconut.

Method

Mix the egg and maybe half the can of coconut milk in a dish.

Flour in 1 dish and shredded coconut in another.

Coat your fish in the flour, the egg/milk mix and then the shredded coconut. Cover and set aside in the fridge for 10 mins or so.

Heat a large frying pan with a little olive oil, hot but not too hot that it will burn the coconut. When you flip fillets over if you wish add a little butter to the pan (optional) cook the other side.  This will only take a couple of minutes each side.

Serve with a salad and chips or rice salad.

If this is too coconutty for you leave out the coconut milk and just use your normal one.
