While flicking around one of my newsletters the other week I found a recipe for this quick yoghurt cake and thought I’d give it a whirl.
I have to say I’m quite happy with the outcome and I think it would go really nicely as a chocolate cake and that will be my next try.
I’ve used yoghurt in my cakes before but not as a total replacement for the eggs in my recipe.
I quite often put yoghurt in my scone dough mixing with my milk but my quantities not half and half.
I always use Greek unsweetened yoghurt as I always have that on hand.
I might try replacing an egg with a couple of tablespoons of yoghurt next time I make a cake from scratch when there is more than one egg …. just to see what happens.
