My Nana when I was a kid made the most gorgeous strawberry sweet pastry tarts, I loved going to my Nanas she was a great cook, she came over to Australia from Europe and brought her recipes. We moved state and she passed away before I decided I liked baking and I don’t have her recipes because they were all in her head, a bit of this, a handful of that, a dash of whatever made that dish good. She is why I like to experiment and hate to waste good ingredients.
This is my version of how I remember her beautiful strawberry tart, though I know it’s not as good as hers. In our house we just call these jelly tarts or a jelly pie as they are good without the fruit are just as good with ice cream and they are easy for the kids to make.
