Whether you use a pastry sheet, your bench top or a chopping board to roll your pastry or knead your dough, you will end up with dried bits stuck to places they shouldn’t be. Upturn your measuring cup and use the rim to scrape your kneading surface; as it’s usually a round plastic cup, you do more angles at once and won’t scratch your surface. If your measuring cup is metal use a sturdy drinking cup.
