*Wiki – Skirt steak is a cut of beef steak from the plate. It is long, flat, and prized for its flavor rather than tenderness. It is not to be confused with flank steak, a generally similar adjacent cut nearer the animal’s rear quarter.
Skirt steak is a versatile and cheaper meat.
I like to cook mine in this pan it goes from stove top searing to the oven and is lidded.
After searing I generally bake it and pop in vegetables with about an hour left to cook.
It can also be cooked in the crock pot with a can of tomatoes, chopped onion and herbs of your choice. Once cooked you can thicken the tomato to use as gravy over the thick slices of meat.
