I’m not a fan of plain old mac and cheese and definitely not the box/pre packaged stuff, you can taste the not so real cheese BUT, it is easy to make your self or at least to make your boxed stuff a little more healthy if that is what you use.
I don’t really have a specific recipe but I do start off with the cheese sauce it’s easy (amounts vary as to how many people you’re making this for, this recipe is for 2 as there is only hubby and I at home at the moment so double it for 4, triple for 6 etc.)
1 tablespoon of corn flour mixed to a paste with milk (2-3tabs) in a large microwavable jug.
1 1/4 cups of milk added to the paste, stirred and microwaved on high for 1 min 30, stir, 1 min, stir 1 min until the mixture boils a little, be careful it does not rise out of the jug.
Add 3/4 to 1 cup of grated cheese of choice this should dissolve mostly in the hot sauce mix it doesn’t matter if it doesn’t. Grind in some pepper and add some chopped parsley (both optional)
1 handful of pasta noodles small shells, spirals etc or a mix of leftover bits you find (my pic is large shells and spirals) Cook then mix with the cheesy sauce.
Cooked left overs, left over spaghetti meat sauce, left over chopped chicken with a little gravy, left over vegetables with a little stock, leftover savoury mince, leftover roast beef with a little gravy, leftover casserole, leftover burrito meat, leftover taco meat, they all work. A mix of all the above if you wish!
In either individual oven safe dishes or 1 large oven safe casserole dish pop the meat or vegetables of your choice and top with the pasta and sauce mix. Sprinkle with a little more cheese and pop under the griller to brown and melt the cheese.
*If your veg or leftovers are cold from the fridge nuke a little in the microwave before popping in the bottom of the dish.
You can just use the mac and cheese with vegetables mixed into the cheese sauce.
Of course if you like your cheese sauce runny add more milk, thicker a little less milk.
This cheese sauce will work for any meal not just the pasta mac and cheese mix.
