Salmon Patties

This recipe works just as well for tuna patties.

  • 1 can 415gram Salmon
  • 2-3 Small - Medium Potatoes
  • 1 Egg
  • Fresh parsley (or dried)
  • Cracked pepper
  • 1/2 cup Breadcrumbs
  • 1/2 cup Plain flour
  • Olive oil

  • 1 can 415gram Salmon
  • 2-3 Small - Medium Potatoes
  • 1 Egg
  • Fresh parsley (or dried)

  • 1/2 cup Breadcrumbs
  • 1/2 cup Plain flour
  • Olive oil
Instructions
  1. Cook, mash potatoes (no extras) and cool to at least room temperature.
  2. Open and drain the salmon. Clean all the skin and bones out. Break into smaller pieces but not too fine.
  3. Put both potato and salmon to a bowl adding the egg, some pepper and chopped parsley. Mix until combined and egg is well distributed.
  4. In a fry pan heat enough oil to cover the bottom to shallow fry, medium-high heat. Roughly divide mixture into portions of 8. Wet your hands lightly then take a portion and roll into a ball, lightly patting into a patty then lightly dusting with the flour/crumb combination.
  5. Place in the oil and repeat for all 8 patties until golden brown. Flip carefully at half way. Add more oil if needed. Place on paper towel to drain.
  6. Serve immediately. We usually have with a salad.

This is a pretty easy recipe that has some give and take.

There are always variables, the size of potatoes, the size of eggs just adjust to your needs.

These are a basic cook item you are just heating up, cooking the egg through and browning the pattie.

I don't always use both flour and crumbs sometimes I use just wholemeal flour but either flour will work.

This is a nice cheap meal.  You can substitute the salmon for tuna.  Use flaked salmon steaks or other flaked and cooked fish.

I usually do potato earlier in the day and just prepare the rest near dinner time.
