Ingredients
  

  • 1 cup Self raising flour
  • 1 Egg
  • 1 teaspoon Sugar
  • 1 cup Milk
  • 1 teaspoon White vinegar

Instructions
 

  • Whisk all ingredients together and set aside for 5 minutes
  • Pour batter into a heated and greased frying pan. When the batter starts to bubble turn over, leave for a minute until browned and risen take out and set aside. Press in the centre gently if you're not sure it's cooked. Eat straight away or cool.

Notes

I use this recipe for pikelets, top with jam and cream.   Pancakes, top with ice cream and syrup.
This batter also makes fritters (savoury fritters leave out the sugar, add salt and pepper and cooked meat and or vegetables)
I freeze cooked pancakes or fritters.  You may need plastic between the pancakes so that you can remove one at a time.

    What is this freezing that you talk about? Made these for morning tea & they are all gone. I would call that a success 🙂

    1. LOL Make up a double batch and freeze what’s left over, that way you can get a few out at a time for kids lunches whenever you need that quick snack OR they can get their own at any time.
