Coconut cherry slice

Ingredients
  

  • 1 cup Self raising flour
  • 1 cup Coconut
  • 1 cup Milk (or coconut milk)
  • 1 cup Caster sugar
  • 1/4 teaspoon Baking Powder
  • 12 Cherries

Instructions
 

  • Measure and mix all the dry ingredients into a bowl.
  • Add milk and stir to combine.
  • Pour into a lined ( 28x18 cm) slice stray.
  • Put pitted half cherries randomly on top.
  • Preheat oven to 180*C. Bake for approx 25 mins. Cool mostly in tray. Cut and place on a wire cooling rack. Serve.

Notes

I use fresh cherries but you could use tinned.
I have found that sometimes the cherries sink in the cake and sometimes they stay on top I have no idea why, maybe the size of the cherry?
Could you use blueberries probably but I've not tried it.
Chocolate chips and cherry quarters sounds like a good combination.
You could use less sugar, 3/4 cup. Above is the original recip.
This will freeze well.

Garlic or Herb bread

It still amazes me how many people I see putting pre made garlic bread in their shopping trolleys.  All you need is a bread roll of your choice, for me it’s any white roll I can find in the freezer.  In one hot dog or hamburger roll you can cut 4-6 slices, not quite all the way through, spread on margarine or butter and sprinkle with herbs.  Soften up your marg or butter adding as much garlic as you like, then spread onto your roll (any leftover garlic butter can be stored in fridge for another time or cooking a steak).  You can either wrap this roll in foil and bake in a heated 180*C oven for  10-15 mins for a soft garlic bread (then open the foil for a few mins to crisp up a little).   I have a tendency to put the roll on a tray/dish and pop in as is.  We like crusty garlic bread.

1 roll works for us (now 3 at home) as I get 6 slices. It is only an accompaniment to a meal so the slices for us don’t need to be huge but you can of course use more than one roll for your meal if you wish.

Fresh garlic is best but jarred works just as well.

Try garlic and herbs together.

Mix a little grated parmesan cheese into the butter.
Of course you can use grain or wholemeal rolls.
You can use turkish bread or rolls if you wish.

Spread one roll with garlic butter and another with herb butter.

I always have a packet of rolls of some sort in my freezer, they are very versatile.

This is great if you have unexpected visitors and wish to stretch a meal further.  Turn on the oven to heat.  The rolls can be defrosted in the microwave quickly, cut, buttered,  and  before you know it dinner will be ready and so will be your garlic bread.

Much much cheaper than store bought.

It is that easy.

Chocolate cheesecake cups

I bought some small chocolate cups to make a special snack for Christmas day but everyone bought not only a salad but a sweet of some sort so I didn’t end up making these.  Yesterday I did.

This is just a fancy version of the chocolate cheesecake balls.

I made up the mix as usual, but instead of rolling mixture into balls then coconut I spooned, or you could pipe the mixture into little chocolate cups  I sprinkled on some chopped chocolate, then let set in the fridge.

What else can you do with the mix …

Spread or pipe cheesecake on chocolate ripple biscuits or on marie biscuits.

Try lemon cheesecake with lemon cream biscuits and some lemon juice to taste.

I’ve done both and they are very tasty and easy.

In this picture I used a different cream biscuit to oreos and the mix turned out lighter.

Double sided foam tape

It’s easy to make your own foam tape especially if you don’t use it often, don’t wish to buy a roll or you’re in a fix and want it now.

Cut a strip of thin double sided tape, place it down the straight edge of some craft foam.  Both sides of foam.  Cut the foam and tape strip along the edge of the tape.  You can then cut to size or shape, peel and stick.

If you don’t have any craft foam, in a pinch you can use cardboard, you just have to find the correct thickness for your use, or double layer it.

You would have more success with a roller glue on cardboard because of it’s firmness than you would with foam and it’s softness to roll on.

I’m not a wet glue user but I see no reason why you couldn’t use glue if that is what you use often, do a sample and see how it turns out.

One month is almost over

I can’t believe that we are on the last day of January already. 1 month of this blog that I hope has some ideas for you, and they are only ideas for you to pick out what is applicable to you and to leave what you don’t like. Every family is different.

Funny how when the new year kicks over the first thing you think of is whose birthday is coming up. My family and friends birthdays have been transcribed to my calendar, for us it’s 3 down and  2 more next week, then the rest of the year.
