Hasselback Potatoes

Do you  remember making hasselback potatoes in Home Economics at school way back when?  I still make them every now and then.  Last week when I went shopping I bought a lemon herb Dukkah spice mix. I decided to sprinkle the dukkah mix on top of the potatoes to see if I actually liked the dukkah spices.  Answer is yes I do.

As I like this Dukkah mix  I’m going to find a nice recipe to make from scratch for next time.

Hasselback Potatoes

Ingredients
  

  • 4 Potatoes
  • Olive oil
  • Salt
  • Pepper
  • Herbs Optional

Instructions
 

  • Slice each potato across the top but not all the way through.
  • Place the potatoes in an oven proof dish. Drizzle a little olive oil across the potatoes, into the slices. Sprinkle with freshly grated salt and pepper (and herbs if you wish).
  • Preheat oven to180- 190*C. Put potatoes in to bake for approx 70 mins or until cooked and browned. Serve.

Notes

In this recipe I used Dukkah spices on top.
Cooking time depends on the size of your potatoes.
Serve with a little Greek yoghurt.

Iced coffee

I make my own iced coffee, it’s cheaper and you control what goes in it,  for us it’s:

500ml Milk (low fat, no fat, full cream, your choice)

2 teaspoons instant coffee. (I don’t use brewed coffee but I guess you can use it)

3 teaspoons of sugar.

In a jug pour a tablespoon or 2 of boiling water over sugar and coffee to dissolve it a little.  Add milk and shake in the lidded shaker or stir/whisk very well in a jug.  Chill in fridge.

This is enough for 2 glasses, if you wish to top with whipped cream and sprinkle on chocolate, go for it.

Iced coffee can also be added to a chocolate cake mix instead of plain milk for that mocha flavour.

Add more coffee if you want a stronger flavour or more sugar for sweetness.

Party time, Lamington birthday cake

A birthday to celebrate last night, my youngest turned 19.  I made my first lamington cake, it was a challenge well met.  Not only did I make it a cake, but a chocolate lamington cake.

I made just a normal chocolate cake in a slice tray.  Baked as usual, cooled as usual. Cut off the 4 side edges.  Mixed up the chocolate coating and here in lies the challenge, it involved pouring the chocolate coating in a tray, sitting the cake in the coating.  Pouring the coating all over the cake making sure all sides were coated, scooping and spoons were included.

Using my superb juggling skills and a couple of egg flips, I lifted the coated cake onto another tray sprinkled with coconut.  Covered with coconut on all sides and lifted finished cake onto my serving plate.  No more moving that cake.  I fixed up those little bits that got knocked while moving and sprinkled with some extra coconut on top.

It was a lovely cake and everyone wanted a corner, more chocolate edges that way.

Pork ribs

For either pork belly spare ribs or US styled ribs.

Ingredients
  

  • 1 kilogram Pork ribs
  • 1 cup BBQ sauce
  • 1/3 cup Sweet chilli sauce
  • 1/2 cup Water or apple juice or orange juice
  • 1-2 cloves Garlic
  • 1/2 teaspoon Ginger

Instructions
 

  • If using ribs with bones (US styled) cut into sections of 2 bones each. If using pork belly ribs cut in half.
  • Mix all other ingredients together. If you like it with more heat add more chilli, add extra real chopped chillies, it is a very forgiving recipe.
  • Add ribs to sauce mix and cover ribs well. Leave for as long as possible to marinate in the fridge.
  • Preheat oven to 170*C. Bake for about 2 hrs in a covered tray/casserole dish or oven bag. Break open the bag or take off the lid or covering, cook for another 15- 30-ish mins until browned and sticky looking.
  • Serve with fried rice, salad or ...

Notes

You can take off the rind strip of the pork belly before cooking if you wish.
I do my ribs in the 2 bones style as it's easy to serve for us but you can cut into single bone fingers, it will take a little less cooking time.
If you make this with a full or half rack it will take probably up to another hour.
An oven bag is good for easy clean up don't forget to leave an air opening when tying off.
If you think the sauce is a little too thick add a bit of apple juice.
Play with the recipe until you find the combination you are happy with.
